We are looking for an exceptional Executive Sushi Chef with a deep craft and passion for the art of sushi to lead the kitchen at our prestigious fine dining Japanese restaurant. This is a unique opportunity for a highly skilled and creative culinary leader to craft memorable sushi experiences while overseeing all aspects of kitchen operations. As the Executive Sushi Chef, you will be the driving force behind the sushi bar, showcasing your expertise and passion for Japanese cuisine, ensuring an unmatched dining experience for our discerning guests.
Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 750 rooms, cottages and villas with 65,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, a food truck, marketplace, ice cream shop, and in-room dining.

Classification: Full-Time
Shift: Various – must be available to weekdays, weekends, and holidays.
Pay Rate: The annual salary range for this role will be between $95,000 and $110,000 per year and is based on applicable and specialized experience and location.
What will I be doing?
· Sushi Preparation: Lead the sushi bar by preparing and presenting world-class sushi using the finest ingredients and traditional techniques. Showcase the artistry of sushi with attention to detail in flavor, texture, and presentation.
· Menu Development: Curate and design a seasonal sushi menu that incorporates both traditional Japanese techniques and innovative creations. Ensure the menu reflects the highest standards of quality and creativity.
· Craftsmanship: Focus on perfecting the art of sushi, from rice preparation to fish selection, cutting, and plating. Maintain a strong emphasis on technique, aesthetics, and flavor balance in every dish.
· Leadership: Supervise and guide the sushi kitchen team, training staff on sushi techniques, kitchen protocols, and maintaining consistency in the quality of sushi and other Japanese dishes.
· Quality Control: Ensure that every sushi dish meets the restaurant's high standards of taste, quality, and presentation. Maintain consistency in sushi preparation and portioning, while adapting to guest preferences.
· Inventory & Sourcing: Source the finest, freshest ingredients, including premium fish, vegetables, and other sushi essentials. Manage inventory and work with suppliers to ensure the best quality products are available.
· Operations Management: Oversee daily kitchen operations, ensuring that all sushi bar and kitchen activities run smoothly. Manage time effectively during peak service hours and work collaboratively with the kitchen and front-of-house staff.
· Guest Interaction: Maintain a presence at the sushi bar, interact with guests when appropriate, and ensure that they are experiencing the artistry and craft of sushi at its finest.
· Health & Safety: Adhere to and enforce all food safety and sanitation guidelines in the kitchen. Maintain a clean and organized work environment at all times.
